The kipferl, the origin of croissant, can be dated back to at least the 13th century in Austria. August Zang simplified the Kipferl in 1839 and founded his own bakery in Paris where it was popular and inspired French imitators

The French version of the kipferl was named for its crescent (croissant) shape and has become a universally identifiable shape across the world

A croissant is classified as a “viennoiserie” in france.
In France, the croissant is part of the category of pastries that the French call “Viennoiserie”, a nod to their origins in Vienna, The term viennoiserie comes from a 20th-century term for supposedly Vienna-style pastries.

The croissant, as we know it today, wasn't invented until the early 1900s.
Although the kipferl had firmly taken up residency in France in the 19th century, it was still a far cry from the flakey pastry we know today. At Days Bakery we give thought and time towards reducing waste. Every day we go through a lot of cups, bags and boxes. We have been working hard along Side our rebrand to make the packaging not only strong and durable but to be able to be recycled or biodegradable.
Today we are proud to say we have replaced our normal recyclable non biodegradable coffee cups with biodegradable ones.
Recycling our bags
Our bakery packaging is another item we have replaced to become more environmentally friendly. Only using recyclable paper bags, boxes.
At Days Bakery we give thought and time towards reducing waste. Every loaf has its time to shine and sometimes these loaves are not sold and need to be thrown away.
To make this process more eco-friendly and sustainable we have signed up to Biogen Bygrave. This means any leftover bread can be made into biogas which is captured and fed into super-efficient gas engines to generate renewable electricity for the grid. What remains is a valuable biofertiliser which we put back into the land to grow more crops.
So our bread not only powers you throughout the day but also powers your home.
